Ingredients

  • 3/4 Cup s;iced green Pepper
  • 1/2 Cup coarsely chopped onion
  • 1 Cup baby carrots, sliced
  • 1/2 Cup baby spinach, chopped
  • 2 Cloves garlic, finely chopped
  • 3 medium Red Potatoes, cut into bite sized pieces
  • 1 small, crooked neck yellow squash, sliced 4.3 oz
  • 2 small zucchini, sliced 12 oz
  • 2-3 fresh tomatoes, chopped 12 oz
  • 1 15oz can tomato sauce
  • 6 Cups water
  • 2 Tbsp Olive Oil
  • 1/4 tsp ground black pepper
  • 1/2 tsp cumin
  • 1 tsp sea salt
  • 1 Tbsp fresh basil, chopped

Instructions

  • Rinse and chop vegetables.  Leave skins on potatoes.
  • Combine all ingredients in a soup pot bring to a
    boil and turn down to medium heat and cook for 30 minutes or until the root
    vegetables can be easily pierced with a fork. 
  • If you are using a crock pot start out on high using hot water and then
    turn down to low and cook for 6 hours.
  • Serve and add a dollop of sour cream or a
    sprinkling of parmesan cheese as a garnish if you like.
