Meet Eldonna

Teacher – Coach – Healthy Food Advocate

Eldonna grew up in northern Idaho where the family produced most of their own food on the home place near DeSmet, Idaho which is fondly referred to as “the ranch”. She comes from a long line of home cooks who have used farm fresh ingredients to create meals enjoyed by family and friends. She graduated from the University of Idaho with a Bachelor of Science degree in Home Economics and had planned to teach in that field. Her career took a different direction toward vocational training, human resources management and health insurance marketing in California, before returning home to the northwest. She was drawn to use her skills to help businesses and communities grow through her work with Chambers of Commerce. She holds a Master of Arts Degree in Organizational Leadership from Gonzaga University and teaches in the College of Business and Public Administration at Eastern Washington University. Due to a life-long interest in food and its relationship to good health, she completed studies through the Institute of Integrated Nutrition in New York, to receive a certification as an Integrated Nutrition Health Coach.

She sees the correlation between healthy communities, organizations and individuals and plans to focus on “wellness”. She founded Food Flavor Fit to help people become aware of good choices to promote healthy lifestyles. Eldonna is available to speak, teaches home cooking classes, writes healthy recipes and provides individual health coaching and recipe consultation to help clients achieve results.

Meet Chef Tim

Chef – Food & Flavor Advisor

Tim’s interest in food started early in his mom’s kitchen. He grew up in California but remembers fondly visits each Summer to Idaho where he got to experience first-hand the joy of picking fresh vegetables and fruits from the garden and watching them loving prepared for the table. After a summer job in a fine dining restaurant in Florida, Tim decided to attend Johnson Wales University North Miami to complete his education in Culinary Arts. Early in his career as a young chef in Miami, Tim impressed a distinguished couple of diners one evening who turned out to be the U.S. Ambassador to Belgium and his wife. The next day they offered him the opportunity to go to Europe to become the Executive Chef for the U.S. Embassy in Brussels. Thus began Tim’s exciting career journey where he has mastered varied types of cooking but has never forgotten his deep interest in authentic regional American food.

After working in Dallas with Stephen Pyle, considered to be the founding father of Modern Texas Cuisine, Tim was intrigued by the regional cooking styles using fire. Tim traveled for 3 months through the deep South to learn from people who have earned reputations as outstanding regional cooks and barbecue pit masters. This was practical preparation for opening the restaurant, Smoke in Dallas and later the writing of his 2014 James Beard Award winning cookbook, Smoke: New Firewood Cooking. His other career distinctions include being named Food & Wine Magazine’s 2012 Best New Chef of the Southwest and being designated as a Culinary Diplomat in 2015 by the U.S. State Department in association with the James Beard Foundation. He has participated in International cultural exchanges including representing American food at the World’s Fair Expo 2015 “Feed the World” in Milan, Italy.

Tim has a genuine interest in healthy natural food and flavors. His approach to cooking is expressed by his philosophy, “Bloom where you are planted.” He embraces the idea of using local and regional foods to bring out the best qualities of taste and health benefits. Meet Nathaniel 

Fitness and Exercise Adviser

Nathaniel Roley attended Grand Canyon University, where he obtained a Bachelor’s degree in Exercise Science. He is currently completing a Master’s degree in Exercise Science from Eastern Washington University, and is on track to graduate by early 2020.

Nathaniel is an active member of the National Strength and Conditioning Association, a nonprofit professional organization dedicated to advancing the strength and conditioning profession around the world.

Furthermore, he is a Certified Strength and Conditioning Specialist, which is the gold standard certification for athletic development and sport performance training. Nathaniel has worked in a variety of different positions in the fitness industry, including a personal trainer at Major League Conditioning Center, supervisor at EWU’s University Recreational Center, and as a volunteer for Parasport Spokane.

Nathaniel currently owns and operates Roley Fitness, a private online training business along with working as a personal trainer at the Spokane Club. With over 5 years of experience in the industry, Nathaniel is ready to help you with all your fitness questions and will be a contributor to our Food Flavor Fit blog.  He can respond to your fitness questions at fitnesspro@foodflavorfit.com .
