Ingredients
- 3/4 Cup s;iced green Pepper
- 1/2 Cup coarsely chopped onion
- 1 Cup baby carrots, sliced
- 1/2 Cup baby spinach, chopped
- 2 Cloves garlic, finely chopped
- 3 medium Red Potatoes, cut into bite sized pieces
- 1 small, crooked neck yellow squash, sliced 4.3 oz
- 2 small zucchini, sliced 12 oz
- 2-3 fresh tomatoes, chopped 12 oz
- 1 15oz can tomato sauce
- 6 Cups water
- 2 Tbsp Olive Oil
- 1/4 tsp ground black pepper
- 1/2 tsp cumin
- 1 tsp sea salt
- 1 Tbsp fresh basil, chopped
Instructions
- Rinse and chop vegetables. Leave skins on potatoes.
- Combine all ingredients in a soup pot bring to a
boil and turn down to medium heat and cook for 30 minutes or until the root
vegetables can be easily pierced with a fork. - If you are using a crock pot start out on high using hot water and then
turn down to low and cook for 6 hours. - Serve and add a dollop of sour cream or a
sprinkling of parmesan cheese as a garnish if you like.
